Kathy Hirdler's Fire Camp Chili

Serves: 120 people

Recipe Ingredients

100 lbs 45400g / 1601ozPinto beans
4 cups 948mlJalapeno chiles with juice
  Bacon - ground beef, etc)
  Salt to taste
  Onions - large, chopped
40 lbs 18160g / 640ozMeat - (ham, sausage, pork
4 cups 948mlChili powder

Recipe Instructions

Soak Beans overnight, then raise to a boil on high heat.

Add all ingredients and simmer until tender (about 6 hours). Add Water as necessary. Stir occasionally.

Makes 60 gallons.
