2 | Garlic - minced | |
3 tablespoons | 45ml | Chili powder |
1 1/2 teaspoons | 7.5ml | Ground cumin |
1/2 teaspoon | 2.5ml | Dried oregano |
1 lb | 454g / 16oz | Carrots - sliced |
1 lb | 454g / 16oz | Red potatoes - cubed |
2 | Diced tomatoes - undrained or (14 1/2 oz each) | |
3 cups | 187g / 6.6oz | Diced fresh tomatoes |
1 | Ca black beans - rinsed/drained | |
1 | Ca kidney beans - rinsed/drained | |
1 | Ca garbanzo beans - rinsed/drained | |
2 1/2 cups | 592ml | Water |
In a Dutch oven, simmer onion in broth for 5 minutes.
Add next six ingredients: bring to a boil. Reduce heat. Cover, simmer 10 minutes.
Add remaining ingredients.
Cover simmer 20 minutes.
