2 lbs | 908g / 32oz | Pork - cubed |
1/2 cup | 118ml | Water |
1 tablespoon | 15ml | Garlic - minced |
1/2 cup | 31g / 1.1oz | Onions - dry |
1 | Stewed tomatoes - 14 oz | |
1 teaspoon | 5ml | Coriander - ground |
1/2 cup | 73g / 2.6oz | Green chilies - chopped |
2 tablespoons | 30ml | Cilantro - chopped |
1 cup | 237ml | Salsa fresca |
Cook pork and garlic in 1/2 cup water until all the water is absorbed.
Let the pork brown in it's fat for a few minutes. Add onion and saute till translucent.
Add tomatoes and chilies, cover and simmer for 30 to 40 minutes.
Just before serving, add the chopped cilantro, salt and pepper to taste, stirring well.
Serve with Salsa Fresca.
