As I mentioned on the introduction page of my website, I found out in October I was pregnant. One of the first cravings I got (after morning sickness was out of the way!) was for Sincronizadas. I had these in Mexico City at Sanborn's Department store cafe first and then made them in my apartment when I was studying there as a college student. The recipe below should be close to the original concept, but you can improvise. It is like grilled ham and cheese, but if you like hot peppers, even better!
From here on it is like making a combination of a grilled ham and cheese and a quesadilla. On the bottom of one tortilla you place two slices of cheese, arrange your jalapenos according to how hot you like it (or can stand it) and finally two slices of ham. Place another tortilla on top and heat on medium in a pan with a tablespoon of oil or butter until browned and cheese is melted. Serve this with any variety of side dishes for a meal, like French fries, refried beans, black bean salad or a little chopped green salad, pico de gallo salsa and other accoutrements common to the Mexican table.
