Chile Verde -- Meat Stew With Green Chiles Recipe - Cooking Index
1 tablespoon | 15ml | Olive oil |
1 | Onion - chopped | |
3 | Garlic - chopped | |
3 lbs | 1362g / 48oz | Pork shoulder - cut in 1 inch cubes, fat trimmed |
1 | Tomatoes | |
2 | Chopped green chiles | |
1 cup | 237ml | Beef stock - or water |
1 1/2 teaspoons | 7.5ml | Salt |
3 teaspoons | 15ml | Potatoes - peeled and cubed (large) (optional) |
Saute onion and garlic in olive oil in Dutch oven.
Remove onion and garlic and brown meat in same pan.
Add onion and garlic to meat, along with all other ingredients.
Cook slowly for 1-1/2 to 2 hours or until meat is tender.
This is best when prepared a day ahead.
