California 3-Bean Chili Recipe - Cooking Index
2 tablespoons | 30ml | Olive oil |
1 cup | 62g / 2.2oz | Chopped onion |
1 | Green bell pepper - coarsely chopped | |
1/2 cup | 118ml | Dry red wine |
1 | Whole tomatoes - (14.5oz), broken up | |
1 | Black beans - (15oz), drained and rinsed | |
1 | Red kidney beans - (15oz), drained and rinsed | |
1 | White northern beans - (15oz), drained and rinsed | |
California Spice Blend | ||
4 teaspoons | 20ml | Chili powder |
1 teaspoon | 5ml | Garlic powder |
1 teaspoon | 5ml | Ground cumin |
1 teaspoon | 5ml | Oregano |
1 teaspoon | 5ml | Basil leaves |
2 teaspoons | 10ml | Sugar |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Seasoned pepper |
1. Heat oil in large saucepan over medium-high heat. Add onion and green pepper, cook 5 minutes, stirring often.
2. Stir in spice blend and remaining ingredients. Bring to a boil. Reduce heat and simmer 20 minutes, stirring occasionally. Garnish with shredded cheese and chopped onion, if desired.
Makes 6 cups.
