Black Bean Chili With Rice Recipe - Cooking Index
1 lb | 454g / 16oz | Lean ground beef |
3 cups | 480g / 16oz | Cooked black beans |
1 cup | 146g / 5.1oz | Diced green pepper |
1 cup | 62g / 2.2oz | Chopped onions |
1 cup | 110g / 3.9oz | Diced carrots |
1 tablespoon | 15ml | Chili powder |
2 | Garlic cloves - minced | |
2 | Bay leaves | |
1/2 teaspoon | 2.5ml | Ground red pepper |
3 cups | 711ml | Vegetable or tomato juice |
4 cups | 640g / 22oz | Hot cooked rice |
Cook beef in 2-3 quart sauce pan over medium heat, stirring to crumble.
Add all ingredients except rice. Bring to boil; simmer uncovered 20-25 minutes.
Remove bay leaves. Serve over hot rice with chips on side.
