Black Bean Chili With Rice

Recipe Ingredients

1 lb 454g / 16ozLean ground beef
3 cups 480g / 16ozCooked black beans
1 cup 146g / 5.1ozDiced green pepper
1 cup 62g / 2.2ozChopped onions
1 cup 110g / 3.9ozDiced carrots
1 tablespoon 15mlChili powder
2   Garlic cloves - minced
2   Bay leaves
1/2 teaspoon 2.5mlGround red pepper
3 cups 711mlVegetable or tomato juice
4 cups 640g / 22ozHot cooked rice

Recipe Instructions

Cook beef in 2-3 quart sauce pan over medium heat, stirring to crumble.

Add all ingredients except rice. Bring to boil; simmer uncovered 20-25 minutes.

Remove bay leaves. Serve over hot rice with chips on side.
