Refried Black Beans - Bill's

Recipe Ingredients

2   Black beans
1/2 teaspoon 2.5mlOnion powder - finely ground
1/4 teaspoon 1.3mlBlack pepper, freshly ground
2 tablespoons 30mlButter, salted
1/2 teaspoon 2.5mlGarlic, minced
  Salt to taste
  Garnish:
1/4 cup 4g / 0.1ozCilantro - chopped
1/4 cup 15g / 0.5ozTomato - diced
1/4 cup 36g / 1.3ozBlack olives - chopped

Recipe Instructions

My wife and I had some really great food at a party boat lunch stop on Isla de Mujares (the boat was out of Cancun). One of our favorite dishes that day was refried black beans. I feel that this recipe duplicates the dish we had and liked so well.

Put the beans with all the liquid into a food processor and blend the beans until smooth. You can also do this with a hand blender with the beans in a saucepan.

Transfer beans to a frying pan over medium heat and add the butter, onion powder, garlic and black pepper. Stir well. After butter melts, reduce heat to low and allow the excess water to evaporate until the beans are almost at the thickness you prefer. Salt to taste.

Serve a big spoonful of beans on each plate and garnish with some tomatoes, olives and some cilantro on the top.
