1 cup | 62g / 2.2oz | Onion - chopped |
1 tablespoon | 15ml | Garlic - chopped |
1/4 cup | 59ml | Chili powder |
1 tablespoon | 15ml | Ground cumin |
1 can | Crushed tomatoes with - added puree | |
1 1/2 cups | 355ml | Beef broth |
2 cups | 125g / 4.4oz | Fresh or frozen corn kernels |
1 cup | 160g / 5.6oz | kidney beans - drained |
1/4 cup | 4g / 0.1oz | Fresh cilantro - chopped |
Cook beef in heavy large pot over med. heat until brown, crumbling with fork, about 10 minutes Add onion, garlic, chili powder, and cumin and cook 5 minutes, stirring frequently.
Mix in crushed tomatoes, beef broth, corn, and kidney beans and bring to boil. Reduce heat and simmer until thickened, about 30 minutes. Mix in cilantro.
