Wheat-Free Applesauce Cake

Recipe Ingredients

2 cups 125g / 4.4ozGround oats*
2/3 cup 131g / 4.6ozSugar
1 teaspoon 5mlSalt
1 teaspoon 5mlBaking soda
2 teaspoons 10mlCinnamon - ground
1/2 teaspoon 2.5mlNutmeg
1/2 cup 99g / 3.5ozShortening - soft
2 cups 396g / 13ozEggs (medium)
1 teaspoon 5mlVanilla
1 cup 237mlApplesauce - sweetened
1 cup 160g / 5.6ozRaisins - optional

Recipe Instructions

Grind oats by running Quaker (or similar) either quick or regular oatmeal in a blender or food processor (I use Quick Oatmeal!) Combine ground oats, sugar, salt, soda, and spices in mixing bowl.

Add shortening, eggs and vanilla. Beat until smooth, about 2 minutes.

Stir in applesauce and raisins (optional).

Pour batter into greased 8-inch square baking pan.

Bake in preheated moderate oven 350F, 35-40 minutes. Cool; cover pan and store one day before serving. Makes one 8" cake.
