Pork Tenderloin In Tequila

Recipe Ingredients

2 lbs 908g / 32ozPork tenderloin
1/4 cup 59mlVegetable oil
2   Garlic - cut in 1/2
1/4 cup 27g / 1ozCarrot - chopped
1/4 cup 27g / 1ozCelery - chopped
1/4 cup 59mlLime juice
1/4 cup 59mlTequila
1 tablespoon 15mlRed chiles - ground
1 teaspoon 5mlSalt
1 teaspoon 5mlOregano leaves - dried
1 teaspoon 5mlThyme leaves - dried
1/4 teaspoon 1.3mlPepper
4 cups 250g / 8.8ozTomatoes - chopped
1/4 cup 15g / 0.5ozOnion - chopped
1   Bay leaf
1/4 cup 59mlParsley - snipped

Recipe Instructions

Spread mustard over the pork tenderloin. Heat oil and garlic in a 10" skillet until hot. Cook pork in oil over medium heat until brown. Remove garlic. Stir in remaining ingredients except the parsley. Heat to boiling then reduce the heat. Cover and simmer until pork is done, about 30 minutes. Remove the bay leaf and sprinkle with the parsley. Serve.
