Sourdough Applesauce Cake Recipe - Cooking Index
1 cup | 237ml | Active starter |
1/2 teaspoon | 2.5ml | Allspice |
1/4 cup | 59ml | Dry skim milk |
1/2 teaspoon | 2.5ml | Cloves |
1 cup | 62g / 2.2oz | Unbleached flour |
2 teaspoons | 10ml | Baking soda |
1 cup | 237ml | Applesauce* |
1/2 cup | 99g / 3.5oz | White sugar |
1/2 teaspoon | 2.5ml | Salt |
1/2 cup | 80g / 2.8oz | Brown sugar |
1 teaspoon | 5ml | Cinnamon |
1/2 cup | 99g / 3.5oz | Butter or margarine |
1/2 teaspoon | 2.5ml | Nutmeg |
1 teaspoon | 5ml | Egg - well beaten (large) |
* homemade best
Mix together the starter, milk, flour, and applesauce, and let stand in a covered bowl in a warm place.
Cream together the sugars and butter.
Add the beaten egg and mix well. Add spices.
You may also add a half cup of raisins or chopped nuts, or a mixture of the two.
Beat by hand until well mixed and no lumps remaining.
Bake at 350F for half to three quarters of an hour.
Test for doneness with a knife when half an hour is up. Allow to cool until cold before cutting and serving.
