Seven-Minute Frosting Recipe - Cooking Index
2 | Egg whites (about 1/4 cup) - at room temp | |
1 1/2 cups | 297g / 10oz | Granulated sugar |
1/4 teaspoon | 1.3ml | Cream of tartar <or> |
1 tablespoon | 15ml | Light corn syrup |
1/3 cup | 78ml | Water |
1 teaspoon | 5ml | Vanilla |
In the top of a double broiler, mix egg whites, sugar, cream of tartar or corn syrup and water.
With a portable mixer, beat egg white mixture on high speed for 1 minute or until thoroughly combined.
Scrape sides and place over boiling water.
Continue beating with mixer at high speed for 5 to 7 minutes or until frosting is thick and stands in peaks when beaters are lifted.
Remove from heat, add vanilla and continue beating until frosting is thick enough to spread. Frosts 1 two-layer cake.
Chocolate Frosting Variation: Prepare Seven Minute Frosting according to directions, adding 1 tablespoon unsweetened cocoa to the egg whites, sugar, cream of tartar or corn syrup and water. Continue recipe as directed.
