Rum Raisin Cheesecake

Recipe Ingredients

1 cup 62g / 2.2ozOld fashioned oats - uncooked
1/4 cup 36g / 1.3ozNuts - chopped
3 tablespoons 45mlBrown sugar - packed
3 tablespoons 45mlMargarine - melted
16 oz 454gCream cheese - softened
1/3 cup 65g / 2.3ozGranulated sugar
1/4 cup 15g / 0.5ozUnbleached all-purpose flour
2 cups 396g / 13ozEggs (large)
1/2 cup 118mlSour cream
3 tablespoons 45mlRum
2 tablespoons 30mlMargarine
1/3 cup 53g / 1.9ozBrown sugar - packed
1/3 cup 53g / 1.9ozRaisins
1/4 cup 36g / 1.3ozNuts - chopped
2 tablespoons 30mlOld fashioned oats - uncooked

Recipe Instructions

Combine oats, nuts, brown sugar and margarine; press onto bottom of 9-inch Springform pan.

Bake at 350F for 15 minutes.

Combine cream cheese, granulated sugar and 2 tbs flour, mixing at medium speed on electric mixer until well blended.

Add eggs, one at a time, mixing well after each addition. Blend in sour cream and rum; mix well.

Pour over crust. Cut margarine into combined remaining flour and brown sugar until mixture resembles coarse crumbs. Stir in raisins, nuts and oats.

Sprinkle over cream cheese mixture.

Bake at 350F for 50 minutes.

Loosen cake from rim of pan; cool before removing rim of pan.
