1 cup | 198g / 7oz | Butter - softened |
3/4 cup | 148g / 5.2oz | Sugar - granulated |
1 teaspoon | 5ml | Vanilla |
1/2 teaspoon | 2.5ml | Lemon peel - grated |
3 teaspoons | 15ml | Eggs (medium) |
1 1/2 cups | 93g / 3.3oz | All-purpose flour |
1/2 teaspoon | 2.5ml | Baking powder |
1/4 teaspoon | 1.3ml | Salt |
Confectioner's sugar |
Preheat oven to 350F.
Cream butter and sugar until light a fluffy, about 3-5 minutes at medium speed on electric mixer.
Add vanilla, lemon peel and eggs (one egg at a time, beating well after each).
Sift together flour, baking powder and salt; stir into mixture.
Grease the bottom only of a 9 x 5 3 inch baking pan.
Fill with the batter.
Bake for 50 minutes or until done.
Cool in pan.
Garnish with confectioner's sugar -- sifted lightly on top.
