Potato Cake Recipe - Cooking Index
1 3/4 cups | 346g / 12oz | C and H granulated sugar |
3/4 cup | 148g / 5.2oz | Butter or margarine |
2 | Eggs | |
1 cup | 237ml | Cold mashed potatoes |
2 oz | 56g | Unsweetened chocolate grated |
1 cup | 146g / 5.1oz | Walnuts - chopped |
2 cups | 125g / 4.4oz | All-purpose flour |
2 teaspoons | 10ml | Baking powder |
2 teaspoons | 10ml | Cinnamon |
2 teaspoons | 10ml | Nutmeg |
1/2 cup | 118ml | Milk |
Cream together sugar and butter. Add eggs one at a time beating well after each addition. Add mashed potatoes, chocolate and nuts.
Stir until well blended.
Combine flour, baking powder and spices. Add alternately with milk to creamed mixture. Spoon thick batter into greased and floured 13 x 9-inch pan.
Bake in 350F oven 45 minutes or until cake tests done. Cool.
Sprinkle with C and H Powdered Sugar or dollop with sweetened whipped cream.
1 cake. 12 servings.
