Pineapple Seven-Up Cake

Recipe Ingredients

  Cake
1   Yellow cake mix
1   Pineapple instant pudding mix
3/4 cup 177mlCooking oil - (Crisco)
4   Eggs
1   Bot 7-up
  Frosting
1 1/2 cups 297g / 10ozSugar
2 tablespoons 30mlFlour
1/2 cup 99g / 3.5ozMargarine (1 stick)
2   Egg yolks - slightly beaten
1   Crushed pineapple - do not drain
1 cup 93g / 3.3ozCoconut*
1 cup 146g / 5.1ozPecans*-- chopped

Recipe Instructions

Mix together cake mix and instant pudding. Add oil. Add eggs, beating well after each addition. Add Seven-Up. Mix well.

Bake in 9x13-inch greased and floured pan at 350F. F for approximately 30 minutes, or until cake pulls away from edge of pan.

Frosting: Mix together sugar and flour. Add the rest of the frosting ingredients except the coconut and pecans -- chopped. Cook on top of stove, or in microwave oven, until thick; then add the coconut and pecans -- chopped. Spread on cake.
