Pineapple Cake Recipe - Cooking Index
20 oz | 568g | Crushed pineapple (unsweetened) |
1 cup | 237ml | Honey |
2 teaspoons | 10ml | Vanilla |
3 cups | 187g / 6.6oz | Am whole wheat flour |
4 teaspoons | 20ml | Non-alum baking powder or |
2 teaspoons | 10ml | Baking soda |
1 cup | 146g / 5.1oz | Chopped nuts |
Mix liquid ingredients. Mix dry ingredients separately.
Combine mixtures. Pour into an oiled 9" x 13" pan.
Bake at 350F for 30-35 minutes.
GLAZE: In a small saucepan mix 1/2 cup frozen orange juice concentrate, 1/2 cup honey or rice syrup, 1 tablespoon oil and 2 tsp.
arrowroot powder dissolved in 1 tablespoon water. Simmer over medium heat until slightly thickened. Poke holes in hot cake and pour glaze on top.
