Pineapple Cake

Recipe Ingredients

20 oz	568g	Crushed pineapple (unsweetened)
1 cup	237ml	Honey
2 teaspoons	10ml	Vanilla
3 cups	187g / 6.6oz	Am whole wheat flour
4 teaspoons	20ml	Non-alum baking powder or
2 teaspoons	10ml	Baking soda
1 cup	146g / 5.1oz	Chopped nuts

Recipe Instructions

Mix liquid ingredients. Mix dry ingredients separately.

Combine mixtures. Pour into an oiled 9" x 13" pan.

Bake at 350F for 30-35 minutes.

GLAZE: In a small saucepan mix 1/2 cup frozen orange juice concentrate, 1/2 cup honey or rice syrup, 1 tablespoon oil and 2 tsp.

arrowroot powder dissolved in 1 tablespoon water. Simmer over medium heat until slightly thickened. Poke holes in hot cake and pour glaze on top.
