Peach Or Nectarine Dessert Cake Recipe - Cooking Index
1 cup | 62g / 2.2oz | Cake flour - sifted |
1 teaspoon | 5ml | Baking powder |
1/4 teaspoon | 1.3ml | Salt |
1/2 cup | 99g / 3.5oz | Sugar |
1/2 cup | 99g / 3.5oz | Shortening |
1 teaspoon | 5ml | Lemon rind - grated |
2 | Eggs - unbeaten | |
4 | Peeled ripe peaches | |
1/3 cup | 65g / 2.3oz | Sugar |
1/2 teaspoon | 2.5ml | Cinnamon |
1/4 cup | 36g / 1.3oz | Walnuts - chopped or pecans |
Sift flour, baking powder and salt. Beat 1/2 cup sugar with shortening until light and creamy. Add lemon rind, then eggs, one at a time; beat well.
Add flour in fourths, beating after each addition. Spread half of batter in greased 8x8 inch pan. Top with peaches.
Mix 1/3 cup sugar, cinnamon and nuts; sprinkle over all.
Bake 50 minutes at 350F.
Serve warm, cut into squares and top with whipped cream, if desired.
