3/4 cup | 148g / 5.2oz | Sugar |
1/4 cup | 59ml | Oil |
1/3 cup | 78ml | Orange juice |
1 teaspoon | 5ml | Orange rind - grated |
3/4 cup | 177ml | Matzo meal |
1/4 cup | 59ml | Potato starch |
1 teaspoon | 5ml | Salt |
1/2 cup | 118ml | Orange marmalade - melted |
Beat yolks and 1/2 cup sugar until light. Beat in oil, juice and rind.
Sift matzo meal, starch and salt and blend into yolk mixture.
Beat whites until foamy, gradually add rest of sugar and beat until stiff peaks form.
Fold yolk mixture into whites. Pour into ungreased 9" tube pan.
Bake 50-60 minutes at 325F.
Invert until cool.
Spoon marmalade over the top.
