Orange Banana Sponge Cake

Recipe Ingredients

7		Eggs - separated
1 cup	198g / 7oz	Sugar
1/4 teaspoon	1.3ml	Salt
1 tablespoon	15ml	Orange rind
1 cup	237ml	Banana - mashed
1 tablespoon	15ml	Orange juice - frozen concentrate
3/4 cup	177ml	Potato starch - sifted

Recipe Instructions

Beat yolks and sugar until light.

Add salt and rind.

Stir in banana, juice, and starch.

Beat whites until stiff and fold in.

Bake in a 325F oven for 50-60 minutes.
