Oatmeal Cake and Frosting Recipe - Cooking Index
1 cup | 237ml | Oatmeal |
1 1/2 cups | 355ml | Boiling water |
1/2 cup | 99g / 3.5oz | Shortening |
1 3/4 cups | 280g / 9.9oz | Brown sugar |
1 cup | 198g / 7oz | Sugar |
6 tablespoons | 90ml | Butter |
1 cup | 93g / 3.3oz | Coconut and nuts (optional) |
2 | Eggs | |
1 1/2 teaspoons | 7.5ml | Cinnamon |
1 teaspoon | 5ml | Soda |
1/2 teaspoon | 2.5ml | Salt |
1 1/3 cups | 83g / 2.9oz | Flour |
1/3 cup | 78ml | Cream or evaporated milk |
Frosting: Mix 3/4 cup brown sugar, butter, cream and coconut. Spread over cake after baking and broil until bubbling.
Cake: Mix and set aside oatmeal and boiling water. Mix remaining ingredients and add to oatmeal.
Bake in 9" X 13" pan at 350F for 30 to 35 minutes.
