| 6 | Eggs - separated | |
| 3/4 cup | 148g / 5.2oz | Sugar |
| 1 teaspoon | 5ml | Lemon rind - grated |
| 2 teaspoons | 10ml | Orange rind - grated |
| 1/2 cup | 118ml | Nuts - ground |
| 2/3 cup | 157ml | Matzo meal |
| 1 tablespoon | 15ml | Potato starch |
| 1 | Salt |
Beat yolks and sugar until light.
Add the rest except for the egg whites and salt.
Beat the latter two until stiff and fold into yolk mixture.
Pour into ungreased spring form pan.
Bake 1 hour at 325F.
Invert on rack to cool.
