Mochi Cake

Recipe Ingredients

1 lb 454g / 16ozMochiko
2 1/2 cups 495g / 17ozSugar
2 teaspoons 10mlBaking powder
1/2 cup 99g / 3.5ozButter or margarine - melted
3 cups 711mlIsland fresh milk
5   Island fresh eggs - beaten
2 teaspoons 10mlLemon extract
1 teaspoon 5mlVanilla
1 cup 93g / 3.3ozCoconut - shredded

Recipe Instructions

Preheat electric oven to 350F. Grease a 13 x 9 x 2-inch pan.

In a large bowl, combine mochiko, sugar, and baking powder.

Add remaining ingredients; mix well.

Pour into prepared pan.

Bake for 1 hour; cool.
