Mattie's Jam Cake Recipe - Cooking Index
2 1/2 cups | 400g / 14oz | Brown sugar |
2 teaspoons | 10ml | Cloves |
2 cups | 474ml | Sour milk |
2 teaspoons | 10ml | Nutmeg |
4 cups | 250g / 8.8oz | Flour |
3 cups | 594g / 20oz | Eggs (large) |
3/4 cup | 148g / 5.2oz | Butter |
15 oz | 426g | Raisins |
2 cups | 474ml | Jam |
1 cup | 62g / 2.2oz | Nutmeats |
2 teaspoons | 10ml | Baking soda |
Figs and dates as desired | ||
3 teaspoons | 15ml | Cinnamon |
Mix all ingredients together well except jam. Lastly, gently stir in the 2 cup jam.
Pour into greased and floured 9" round cake pans.
Bake in 325F oven for 35-40 minutes or until toothpick inserted in center comes out clean.
If desired, serve caramel icing.
