Lighter Pound Cake Recipe - Cooking Index
2 1/4 cups | 140g / 4.9oz | Flour - all-purpose |
3/4 teaspoon | 3.8ml | Baking powder |
1/4 teaspoon | 1.3ml | Baking soda |
1/4 teaspoon | 1.3ml | Salt |
1/8 teaspoon | 0.6ml | Mace - ground |
1/2 cup | 118ml | Margarine - corn oil |
1 cup | 198g / 7oz | Sugar |
3 | Egg whites | |
1 1/2 teaspoons | 7.5ml | Vanilla extract |
3/4 cup | 177ml | Buttermilk |
Preheat oven to 350F. Spray an 8 1/2 by 4 1/2 inch loaf pan with nonstick cooking spray.
In a bowl, combine flour, baking powder, baking soda, salt and mace. Mix well and set aside.
In a mixing bowl, cream margarine and sugar together until smooth. Add egg whites and vanilla; blend until smooth.
Alternately add flour mixture and buttermilk to batter in two additions each, blending well after each addition.
Spoon batter into prepared pan and bake for 1 hour.
Let cake cool before slicing.
