Kentucky Pecan Cake Recipe - Cooking Index
2 1/2 cups | 156g / 5.5oz | Self rising flour |
2 tablespoons | 30ml | Hot water |
2 cups | 396g / 13oz | Sugar |
4 | Egg yolks | |
1 1/2 cups | 355ml | Vegetable oil |
1 cup | 146g / 5.1oz | Pecans - chopped |
1 cup | 237ml | Applesauce |
4 | Egg whites | |
2 1/2 tablespoons | 37ml | Ground cinnamon |
Powdered sugar |
Combine first 7 ingredients in order listed; beat at medium speed of mixer until smooth. Stir in pecans -- chopped.
Beat egg whites (at room temperature) until stiff; fold into batter.
Pour mixture into an ungreased 10-inch tube pan.
Bake at 350" for 1 hour and 30 minutes. Invert pan, and cool cake completely; remove from pan.
Sprinkle top of cake with powdered sugar.
