8 oz | 227g | Dried apricots - cut up |
8 oz | 227g | Dates - pitted - cut up |
1 1/2 cups | 219g / 7.7oz | Brazil nuts - chopped |
1 cup | 62g / 2.2oz | Maraschino cherries - drained, halved |
1 cup | 237ml | Candied pineapple - cut up |
3/4 cup | 46g / 1.6oz | Flour |
3/4 cup | 148g / 5.2oz | Sugar |
1/2 teaspoon | 2.5ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
3 | Eggs | |
1 1/2 teaspoons | 7.5ml | Vanilla |
Heat oven to 325F.
Place paper nut cups or miniature paper cups on baking sheet.
Mix ingredients thoroughly. Spoon about 1 tablespoon into each cup.
Bake for 25 minutes. or until a toothpick comes out clean. If they are getting too dark cover with tinfoil the last 10 minutes.
Cool completely.
Wrap securely and store in refrigerator.
Makes about 3 1/2 doz. To make in small loaf pans: Line pans with aluminum foil and bake for 35-40 minutes. Makes 6
