Hot Milk Cake (Toasted Coconut Squares)

Recipe Ingredients

2   Eggs (large)
1 cup 198g / 7ozSugar
1 cup 62g / 2.2ozFlour
1 teaspoon 5mlBaking powder
1/2 teaspoon 2.5mlSalt
1 teaspoon 5mlVanilla
1/2 cup 118mlMilk
1 tablespoon 15mlButter
  Topping
1/2 cup 80g / 2.8ozBrown sugar
1 cup 93g / 3.3ozCoconut
2 teaspoons 10mlButter
2 tablespoons 30mlMilk

Recipe Instructions

Beat eggs, add sugar, continue beating. Add flour, baking powder and salt. Add vanilla.

Add butter to milk and bring to boil. (I do this in microwave.) Then add hot milk mixture to egg mixture. Mix well and pour into pan.

Bake until light brown.

Topping: Melt 2 teaspoons butter in small pan. Add 2 tablespoons milk and 1/2 cup brown sugar. Mix well. Pour over cake. Sprinkle with 1 cup coconut and brown in oven.
