Guinness Cake Recipe - Cooking Index
| 1/2 cup | 99g / 3.5oz | Butter |
| 1 cup | 160g / 5.6oz | Brown sugar |
| 3 | Egg - beaten | |
| 2 1/4 cups | 140g / 4.9oz | Flour, self rising |
| 1/2 teaspoon | 2.5ml | Apple pie spice |
| 1 | Salt | |
| 2/3 cup | 106g / 3.7oz | Raisins - soaked in Guinness |
| 1/2 cup | 118ml | Candied peel - soaked |
| 1 1/3 cups | 213g / 7.5oz | Golden raisins - soaked |
| 1/4 cup | 15g / 0.5oz | Candied cherries |
| 8 | Guinness or other dark beer |
Preheat oven to 350F.
Cream the butter and sugar until the sugar is dissolved; beat in the eggs.
Add the flour, salt, apple pie spice and the soaked dried fruit.
Mix in the Guinness, grease a deep 8 inch cake pan and pour the mixture in.
Bake for about 2 hours until firm in the center.
