Guinness Cake

Recipe Ingredients

1/2 cup 99g / 3.5ozButter
1 cup 160g / 5.6ozBrown sugar
3   Egg - beaten
2 1/4 cups 140g / 4.9ozFlour, self rising
1/2 teaspoon 2.5mlApple pie spice
1   Salt
2/3 cup 106g / 3.7ozRaisins - soaked in Guinness
1/2 cup 118mlCandied peel - soaked
1 1/3 cups 213g / 7.5ozGolden raisins - soaked
1/4 cup 15g / 0.5ozCandied cherries
8   Guinness or other dark beer

Recipe Instructions

Preheat oven to 350F.

Cream the butter and sugar until the sugar is dissolved; beat in the eggs.

Add the flour, salt, apple pie spice and the soaked dried fruit.

Mix in the Guinness, grease a deep 8 inch cake pan and pour the mixture in.

Bake for about 2 hours until firm in the center.
