Gala Apricot Cheesecake

Recipe Ingredients

2 1/4 cups 140g / 4.9ozQuick oats - uncooked
1/3 cup 53g / 1.9ozBrown sugar - packed
3 tablespoons 45mlUnbleached all-purpose flour
1/3 cup 65g / 2.3ozMargarine - melted
1   Unflavored gelatin
1/3 cup 78mlCold water
16 oz 454gCream cheese - softened
1/2 cup 99g / 3.5ozGranulated sugar
2 tablespoons 30mlBrandy
1/2 cup 118mlDried apricots - fine chop
1 cup 237mlWhipping cream - whipped
10 oz 284gApricot preserves (1 jar)
1 tablespoon 15mlBrandy

Recipe Instructions

Combine oats, brown sugar, flour and margarine, press onto bottom of 9-inch Springform pan.

Bake at 350F for 15 minutes. Cool Soften gelatin in water; stir over low heat until dissolved.

Combine Cream Cheese and granulated sugar, mixing at medium speed on electric mixer until well blended. Gradually add gelatin and brandy to cream cheese mixture mixing until well blended.

Chill until slightly thickened; fold in apricots and whipped cream. Pour into crust; chill until firm. Heat combined preserves and brandy over low heat; cool.

Spoon over cheese- cake.

VARIATION: Substitute Neufchatel cheese for Cream Cheese
