Cake | ||
6 oz | 170g | Self raising flour |
3 oz | 85g | Brown sugar |
1 1/2 lbs | 681g / 24oz | Mixed fruit |
1/2 teaspoon | 2.5ml | Cinnamon |
1/2 teaspoon | 2.5ml | Mixed spice |
1/2 teaspoon | 2.5ml | Ginger |
1/2 teaspoon | 2.5ml | Nutmeg |
1/2 teaspoon | 2.5ml | Cayenne pepper |
1. Make pastry. Mix cake ingredients to a fairly soft consistency.
2. Line a loaf tin with the pastry, add cake mixture and top with pastry.
3. Bake in oven at 325 F for 1 hour then gradually reduce heat to 300 F for 2 hours.
