Fruitcake - 2 Recipe - Cooking Index
2 cups | 320g / 11oz | Light brown sugar |
1 1/2 cups | 219g / 7.7oz | Chopped dates |
1/4 cup | 59ml | Molasses |
12 oz | 340g | Butter or margarine - (1 1/2 sticks) |
1 1/2 cups | 355ml | Hot water |
2 | Eggs - beaten | |
1 cup | 146g / 5.1oz | Nuts - chopped |
1 | Maraschino cherries - sliced (10 oz.) | |
2 1/2 cups | 156g / 5.5oz | Flour |
1 teaspoon | 5ml | Baking powder |
1 teaspoon | 5ml | Baking soda |
1 teaspoon | 5ml | Cinnamon |
1/2 teaspoon | 2.5ml | Nutmeg |
1 teaspoon | 5ml | Salt |
Raisins may be substituted for some or all of the dates.
Place first group of ingredients in a pan and boil 3 minutes; set aside to cool. When cool add second batch of ingredients stirring after each addition.
Sift together remaining ingredients and add to the fruit mixture a little at a time stirring well after each addition.
Place in greased and floured pans. Bake at 275F for 2 1/2 hours or until done.
Bake in bundt or tube cake pan, or 2 or more loaf pans.
