1/2 teaspoon | 2.5ml | Salt |
1 teaspoon | 5ml | Cinnamon |
1/8 teaspoon | 0.6ml | Nutmeg |
2 teaspoons | 10ml | Vanilla |
3 cups | 438g / 15oz | Macintosh apples - diced |
2 cups | 292g / 10oz | Walnuts - chopped |
Glaze- | ||
1 1/2 cups | 297g / 10oz | Sugar |
1/2 cup | 118ml | Sherry |
Cream butter and sugar well; add eggs, one at a time, beating well after each addition; sift flour, soda, salt, cinnamon and nutmeg together; gradually add to butter mixture; stir in vanilla; fold in apples and walnuts; pour into a greased 10-inch tube pan.
Bake in a preheated, 325F oven for approximately 1 1/2 hours; cool; drizzle sherry glaze over cake and serve.
Sherry Glaze:
Combine sugar and sherry in a heavy saucepan; cook, stirring constantly, until syrupy, about 2 minutes.
