Favorite Devil's Food Cake

Recipe Ingredients

1 cup 198g / 7ozSugar
3/4 cup 120g / 4.2ozBrown sugar
1/2 cup 99g / 3.5ozSoft butter
3 oz 85gUnsweetened chocolate - melted
3   Egg yolks
1/4 cup 59mlWater
1 teaspoon 5mlVanilla
2 cups 125g / 4.4ozCake flour
1/2 teaspoon 2.5mlSalt
1 cup 237mlMilk
1 teaspoon 5mlBaking soda
3   Egg whites - stiffly beaten

Recipe Instructions

Cream sugars and butter. Add melted chocolate.

Beat yolks, add water and vanilla and blend. Gradually add yolk mixture to chocolate mixture, beat until light and fluffy. Sift together flour, salt, and baking soda.

Alternately add flour mixture and milk, blending well after each addition. Beat egg whites until stiff, but not dry, fold into batter. Turn into 2 greased and floured 9-inch round pans, or one greased and floured 13x9x2 inch pan.

Bake layers or loaf in 350F about 30-35 minutes, or until cake springs back when touched lightly. Turn out on cooling rack.
