Dad's Favorite Spice Cake Recipe - Cooking Index
3 cups | 187g / 6.6oz | All-purpose flour |
2 teaspoons | 10ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
2 1/2 teaspoons | 12ml | Ground cinnamon (to 3 tsp) |
1/2 teaspoon | 2.5ml | Ground nutmeg |
1 cup | 198g / 7oz | Butter or margarine - softened |
1 1/4 cups | 247g / 8.7oz | Granulated sugar |
1/2 cup | 80g / 2.8oz | Brown sugar - packed |

3/4 cup | 177ml | Water |
1 1/4 cups | 137g / 4.8oz | Semi-sweet chocolate morsels |
Glaze | ||
1/2 cup | 118ml | Milk |
3/4 cup | 82g / 2.9oz | Semi-sweet chocolate morsels |
1 tablespoon | 15ml | Corn syrup |
In medium bowl, combine flour, baking powder, cinnamon and nutmeg.
In large mixer bowl, cream butter, granulated sugar and brown sugar. Add eggs, 1 at a time, beating well after each addition. Gradually beat in dry ingredients alternately with water; stir in 1-1/4 cup morsels. Spoon batter into greased and floured 10" fluted tube pan.
Bake in preheated 350F oven for 45 to 50 minutes or until pick inserted in center comes out clean.
Cool for 10 minutes.
Remove from pan. Cool completely on wire rack.
GLAZE- in small heavy saucepan over low heat, melt 3/4 cup morsels, milk and corn syrup, stirring until smooth. Cool for 10 minutes; pour over cake.
Serve with ice cream.
