Dad's Favorite Spice Cake

Recipe Ingredients

3 cups 187g / 6.6ozAll-purpose flour
2 teaspoons 10mlBaking powder
1/2 teaspoon 2.5mlSalt
2 1/2 teaspoons 12mlGround cinnamon (to 3 tsp)
1/2 teaspoon 2.5mlGround nutmeg
1 cup 198g / 7ozButter or margarine - softened
1 1/4 cups 247g / 8.7ozGranulated sugar
1/2 cup 80g / 2.8ozBrown sugar - packed
3   Eggs
3/4 cup 177mlWater
1 1/4 cups 137g / 4.8ozSemi-sweet chocolate morsels
  Glaze
1/2 cup 118mlMilk
3/4 cup 82g / 2.9ozSemi-sweet chocolate morsels
1 tablespoon 15mlCorn syrup

Recipe Instructions

In medium bowl, combine flour, baking powder, cinnamon and nutmeg.

In large mixer bowl, cream butter, granulated sugar and brown sugar. Add eggs, 1 at a time, beating well after each addition. Gradually beat in dry ingredients alternately with water; stir in 1-1/4 cup morsels. Spoon batter into greased and floured 10" fluted tube pan.

Bake in preheated 350F oven for 45 to 50 minutes or until pick inserted in center comes out clean.

Cool for 10 minutes.

Remove from pan. Cool completely on wire rack.

GLAZE- in small heavy saucepan over low heat, melt 3/4 cup morsels, milk and corn syrup, stirring until smooth. Cool for 10 minutes; pour over cake.

Serve with ice cream.
