Cranberry Nut Cake Recipe - Cooking Index
| 1 cup | 198g / 7oz | Shortening |
| 1 1/2 cups | 297g / 10oz | Sugar |
| 4 | Eggs | |
| 3 cups | 187g / 6.6oz | Flour - sifted |
| 2 1/2 teaspoons | 12ml | Baking powder |
| 1/2 teaspoon | 2.5ml | Salt |
| 1/2 teaspoon | 2.5ml | Milk |
| 2 cups | 186g / 6.6oz | Cranberries - finely chopped |
| 1 cup | 62g / 2.2oz | Nut meats, optional - chopped |
Cream shortening and sugar well. Add eggs one at a time, beating well after each addition.
Sift together the flour, baking powder and salt and add to the creamed mixture alternately with the milk, blending after each addition.
Fold in the cranberries and nuts.
Bake in loaf pan at 350F for 1 hour or until done.
When cool frost with cranberry frosting if desired or sprinkle with confectioners sugar.
