Cranberry Bundt Cake

Recipe Ingredients

1 cup 198g / 7ozSugar
3/4 cup 148g / 5.2ozShortening
2   Eggs
2 cups 125g / 4.4ozFlour
1/4 teaspoon 1.3mlSalt
1/4 teaspoon 1.3mlBaking powder
1 teaspoon 5mlBaking soda
1 cup 237mlButtermilk
1 teaspoon 5mlOrange flavoring
1 cup 93g / 3.3ozWhole cranberries
1 cup 146g / 5.1ozDates - chopped
1 cup 146g / 5.1ozNuts - chopped

Recipe Instructions

Thoroughly cream sugar and shortening. Beat in eggs. Sift dry ingredients together and add alternately with buttermilk. Beat until smooth and fluffy. Add remaining ingredients.

Spoon into well greased bundt cake pan.

Bake at 350F for about one hour or until it tests done. Let stand in pan for 15 minutes before turning out on plate.

Cake can be glazed with a thin powdered sugar icing which has been flavored with orange flavoring. Can also combine 1 cup sugar, 1 cup orange juice and 1/4 tsp orange flavoring; bring to boil and pour over cake while warm. Let set several hours before serving.
