Carrot Cake - 2 Recipe - Cooking Index
| 2 cups | 125g / 4.4oz | Flour |
| 2 cups | 396g / 13oz | Sugar |
| 1 tablespoon | 15ml | Cinnamon |
| 2 teaspoons | 10ml | Soda |
| 2/3 cup | 157ml | Cooking oil |
| 2 cups | 220g / 7.8oz | Grated carrots |
| 4 | Eggs | |
| 1 cup | 146g / 5.1oz | Nuts - chopped |
| Frosting | ||
| 1 | Cream cheese | |
| 1/4 | Margarine | |
| 1 teaspoon | 5ml | Vanilla |
| 2 1/2 cups | 495g / 17oz | Powdered sugar |
Mix all ingredients in order; beat well. Pour into 2 9x5x2-inch loaf pans.
Bake at 350F one hour, or until done. Frost with the following frosting, if desired.
Frosting:
Mix all ingredients well. Spread frosting over cooled cake.
