Carrot Cake - 1

Recipe Ingredients

1 cup 237mlOil
1 cup 198g / 7ozSugar
1 cup 160g / 5.6ozBrown sugar
1 teaspoon 5mlVanilla
  Eggs
2 cups 125g / 4.4ozFlour - whole wheat
1/3 cup 78mlDry milk
1 teaspoon 5mlBaking soda
1 teaspoon 5mlSalt
1 teaspoon 5mlBaking powder
2 teaspoons 10mlCinnamon
3 cups 330g / 11ozCarrots; shredded
1 cup 146g / 5.1ozWalnuts; chopped

Recipe Instructions

In large bowl, blend oil and sugars on low until well mixed. Add vanilla. Beat in eggs, one at a time, blending well after each addition. Stir together dry ingredients and add to egg mixture until well blended. Stir in walnuts and carrots by hand. Pour batter into well greased and floured 10" tube pan or fluted pan.

Bake at 350F for 50-60 minutes. Cool in pan, then top with powdered sugar or frosting of your choice.
