1 teaspoon | 5ml | Cinnamon |
1/4 teaspoon | 1.3ml | Nutmeg |
1 teaspoon | 5ml | Lemon juice |
Cake | ||
2 cups | 125g / 4.4oz | White flour |
2 teaspoons | 10ml | Baking powder |
1/4 teaspoon | 1.3ml | Salt |
1 cup | 198g / 7oz | Butter |
1 teaspoon | 5ml | Vanilla extract |
1 1/3 cups | 263g / 9.3oz | White sugar |
2 | Eggs | |
1 cup | 237ml | Sour cream |
One lemon - zest of | ||
Glaze | ||
1 cup | 198g / 7oz | Confectioners sugar |
1 tablespoon | 15ml | Lemon juice |
Few drops boiling water |
Blueberry Surprise Combine all ingredients, except lemon juice. Drizzle on lemon juice, let stand.
Cake Preheat oven to 350F. Butter and flour a 9"x3" Springform pan.
Sift dry ingredients together. Cream butter, sugar and vanilla. Add eggs and beat. Add sour cream. Add sifted dry ingredients. Add lemon zest.
Pour 1/2 batter into pan. Spoon in blueberry mixture, keeping 1/2 inch away from edge of pan. Add rest of batter.
Bake for 1 hour and 20-30 minutes.
Glaze Combine ingredients and pour on warm cake.
