Blueberry Oatmeal Cake

Recipe Ingredients

1 cup 237mlBlueberries
1/4 cup 49g / 1.7ozSugar - +2 t
1/3 cup 109g / 3.8ozCorn syrup
2   Egg whites
3/4 cup 46g / 1.6ozFlour - all-purpose
2 tablespoons 30mlCornstarch
1 teaspoon 5mlBaking soda
1/3 cup 78mlOatmeal - uncooked
1/2 teaspoon 2.5mlLemon rind - grated
1/4 teaspoon 1.3mlNutmeg
1/8 teaspoon 0.6mlCardamom
1/2 cup 118mlNonfat mayonnaise

Recipe Instructions

Recipe by: The Mormon Diet Cookbook Preparation Time: 1:10 Spray bottom and sides of 9" layer cake pan. Line bottom with wax paper.

In small bowl, combine blueberries and 2 tbs of sugar. Spoon into pan.

In large bowl, mix corn syrup and remaining sugar. Add egg whites or egg replacer; beat until light and fluffy.

Combine dry ingredients and lemon rind. Stir into egg mixture, alternating with mayonnaise.

Carefully spoon over berries in pan.

Bake in a 350F oven for 30 - 45 min or until top springs back when touched.

Remove from oven; let stand 5 minutes Loosen sides with metal spatula. Invert on cooling rack and remove wax paper.
