3/4 cup | 46g / 1.6oz | All-purpose flour |
1/4 cup | 49g / 1.7oz | Granulated sugar |
1/2 teaspoon | 2.5ml | Baking soda |
1/8 teaspoon | 0.6ml | Salt |
2/3 cup | 157ml | Butter milk |
3/4 teaspoon | 3.8ml | Vanilla extract |
1 1/2 cups | 355ml | Rasp/blueberries frs or frz |
1 tablespoon | 15ml | Granulated sugar |
1 teaspoon | 5ml | Granulated sugar |
1 teaspoon | 5ml | Cornstarch |
1 teaspoon | 5ml | Lemon peel - grated |
Blueberries/raspberries must be fresh or frozen -- not thawed. May use a mixture of the two.
1. Preheat oven to 350F. Spray an 8" square baking pan with nonstick cooking spray.
2. In a small bowl, whisk flour, sugar, baking soda and salt. Whisk in buttermilk and vanilla. Spread evenly into prepared pan.
3. Distribute berries evenly over batter.
4. In a small bowl, combine sugar, cornstarch, and lemon peel. Sprinkle evenly over berries and bake in upper third of oven 35-40 minutes, or until golden brown and beginning to pull away form the edges of pan. Cool completely before cutting.
