Streusel Topping | ||
1/3 cup | 53g / 1.9oz | Brown sugar - packed |
1/3 cup | 20g / 0.7oz | All-purpose flour |
3/4 teaspoon | 3.8ml | Ground cinnamon |
1/4 cup | 49g / 1.7oz | Butter or margarine |
Preheat oven to 375F. In a large bowl beat butter and sugar until light and fluffy. Beat in egg, lemon peel and vanilla until smooth. Stir in milk.
In a small bowl, combine flour, baking powder and salt; add to butter mixture, stirring until blended. Slice bananas (3 cups); fold into batter. Spoon batter into greased 8-1/2 Springform pan. Smooth top. Sprinkle streusel topping.
Bake in preheated oven 45-50 minutes or until a wooden pick inserted in center comes out clean. Cool on wire rack 20 minutes before cutting.
Streusel Topping: In a medium bowl combine first 3 ingredients. Cut in butter or margarine until mixture is crumbly.
