1/4 cup | 49g / 1.7oz | Sugar |
1/4 cup | 59ml | 2% yogurt or |
3/4 | Lemon juice + 2% milk | |
1/3 cup | 78ml | 2% milk |
1/2 cup | 118ml | Bran |
1 cup | 237ml | Apple - grated (medium) |
1/2 cup | 80g / 2.8oz | Raisins - soaked |
1/2 cup | 31g / 1.1oz | Rolled oats |
Dry ingredients | ||
1/3 cup | 20g / 0.7oz | Whole-wheat flour |
1/3 cup | 20g / 0.7oz | All-purpose flour |
3/4 teaspoon | 3.8ml | Baking powder |
1/2 teaspoon | 2.5ml | Baking soda |
3/4 teaspoon | 3.8ml | Cinnamon |
1/4 teaspoon | 1.3ml | Salt |
In large bowl, combine the first nine ingredients. Sift dry ingredients together. Add to bran mixture, stirring until moistened. Spoon into muffin cups. Bake at 425F about 20 minutes or until golden brown.
