Auntie Babe's Cheese Cake

Recipe Ingredients

  Crust
1 2/3 cups 243g / 8.6ozGraham cracker crumbs
1 1/2 teaspoons 7.5mlCinnamon
2 tablespoons 30mlSugar
6 tablespoons 90mlButter - melted
  Filling
1 cup 198g / 7ozSugar
3   Eggs - beaten well
24 oz 681gCream cheese - softened
1/2 teaspoon 2.5mlVanilla
  Topping
1   Sour cream
3 tablespoons 45mlSugar
1/2 teaspoon 2.5mlVanilla

Recipe Instructions

Combine crust ingredients and pat into bottom and sides of pan. Beat cream cheese thoroughly; add sugar gradually; add eggs in thirds; add vanilla; pour into prepared pan.

Bake at 375F for 25 minutes; remove from oven and add topping. To prepare topping, whip sour cream; add sugar and vanilla, and pour over cake. Continue baking at 500F for 5 minutes. Important - chill at LEAST 24 hours.
