Apple Corn Johnny Cake Recipe - Cooking Index
1 cup | 62g / 2.2oz | Corn meal |
3/4 cup | 120g / 4.2oz | Rice flour |
4 teaspoons | 20ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
2 tablespoons | 30ml | Sugar |
2 | Eggs - separated | |
2 tablespoons | 30ml | Canola oil |
1 3/4 cups | 414ml | Applesauce (14 oz can) |
6 | Bacon strips - cooked, crumbled |
Breakfast idea without gluten or dairy. Serve warm with maple syrup or as a quick bread with soup or salad. In a large mixing bowl combine cornmeal, rice flour, baking powder, salt and sugar. Beat egg whites until stiff. To the dry ingredients, add egg yolks, oil, applesauce and bacon. Stir well.
Fold in egg whites. Pour batter into greased 8x8 inch baking pan (or prepared muffin pan). Bake in 425F oven for 45 min or until an inserted knife comes out clean.
