7-Grain Oatmeal Cake Recipe - Cooking Index
| Cream Together | ||
| 1 cup | 237ml | Am canola oil |
| 2 cups | 656g / 23oz | Maple syrup |
| 1 1/2 teaspoons | 7.5ml | Vanilla - mix until smooth: |
| 2 cups | 125g / 4.4oz | Am unbleached white flour |
| 3/8 cup | 23g / 0.8oz | Am soy flour |
| 1/2 cup | 118ml | Cold water |
| 1/2 cup | 118ml | Soy milk |
| 1 1/2 teaspoons | 7.5ml | Lemon rind - grated |
| 1 1/2 teaspoons | 7.5ml | Sea salt - (optional) |
| 3 | Egg whites | |
| 2 teaspoons | 10ml | Cinnamon |
| 2 teaspoons | 10ml | Non-alum baking powder |
| Mix Together and Add | ||
| 7 cups | 210g / 7.4oz | Grain cereal - cooked |
| 5 cups | 312g / 11oz | Rolled oats |
| 1/2 cup | 80g / 2.8oz | Raisins - (optional) |
| 1/2 cup | 73g / 2.6oz | Nuts - chopped |
Mix well and fill oiled cake pan 3/4 full. Bake 350F until light golden brown. This is not a very sweet cake. May be served with apple butter, honey, etc.
