Succotash Recipe - Cooking Index
1 cup | 160g / 5.6oz | Green beans - snapped |
1 cup | 237ml | Soy milk |
1 | Red bell pepper - diced | |
1 | Onion - diced (large) | |
1 teaspoon | 5ml | Sage |
1 | Garlic clove - minced | |
1 cup | 62g / 2.2oz | Corn |
Simmer the beans in soy milk for a few minutes. Add bell pepper, garlic, sage & onion & continue to simmer until the beans, pepper & onion are cooked.
Add the corn and cook for no more than 5 minutes before serving. Sprinkle with salt & pepper if so desired before serving.
