1/4 cup | 49g / 1.7oz | Margarine or butter |
1 cup | 62g / 2.2oz | Onion - chopped (medium) |
1 cup | 146g / 5.1oz | Green pepper - chopped (large) |
1 | Garlic clove - minced | |
1 | Diced pimientos - (4 oz) | |
1/8 teaspoon | 0.6ml | Salt |
1/8 teaspoon | 0.6ml | Pepper |
1 | Ro*tel diced tomatoes and green chilies - (10 oz) | |
1 lb | 454g / 16oz | Shrimp - shelled and deveined |
Cooked rice |
In a large skillet, melt margarine; saute onion, pepper and garlic until tender.
Stir in pimientos, salt, pepper and RO*TEL; simmer 10 minutes. Add shrimp and cook until done, about 5 minutes, stirring occasionally.
Serve with cooked rice.
